Biorsaf raises €5.2M and acquires Cooki to create Italy's first AI-powered food RegTech platform, covering everything from HACCP to labelling.

Italy's food safety sector is getting a major upgrade. Biorsaf, a Tuscany-based company that digitizes food safety and quality processes, just raised €5.2 million (about $5.6 million) and acquired Cooki, a Bologna-based platform for digital food information management. Together, they're building Italy's first end-to-end solution for food compliance and data management. ### What This Means for the Food Industry The acquisition creates a single platform that covers every stage of the food value chain: from HACCP food safety to quality control, traceability, nutritional values, cost analysis, and labelling. For food businesses, this means one system instead of many—saving time, money, and headaches. Marco Papalini, CEO of Biorsaf, put it simply: "This new funding round and the acquisition of Cooki accelerate Biorsaf's growth. In just three years, we have built Italy's reference platform for automating food compliance, and we are ready for the next development stage." He added, "Bringing Cooki into the fold rounds out our offering and marks the first step in consolidating a market that is still highly fragmented. Our goal is to scale rapidly, both organically and through market consolidation and technological innovation, putting artificial intelligence to work for the efficiency of business in the food sector." ### The Brains Behind the Operation Biorsaf was founded in 2021 in Castell'Azzara (Grosseto) and developed BS-Safe, a platform that digitizes food safety, workplace safety, and water quality management. It automates control processes, improves traceability, and manages data and regulatory compliance centrally. The platform claims to eliminate paper entirely and automate checks and tasks traditionally done by hand. According to the company, this saves an estimated 30 minutes of work per user per day and cuts operating costs by €30 million (about $32.4 million) across active users in 2025, while directly improving efficiency, sustainability, and safety. Biorsaf also built the first professional AI agent dedicated to digital food safety management, designed to automate monitoring, compliance, and document management for specialist consultants. Cooki, founded by Giuseppe Grammatico in 2017, is active in more than 450 Italian cities, with over 1,000 users and a unique database of more than 35,000 coded products. It automates traceability, labelling, food costing, stock management, and allergen risk management. ### The Road Ahead With this acquisition, Biorsaf can offer the only Italian solution able to automate every major process across the food supply chain. The company plans to grow from 40 to 120 employees within the next 18 months and to grow revenues exponentially year on year. The core of the plan is developing a one-of-a-kind AI platform designed to transform and automate quality, safety, and operations management. Biorsaf is targeting Italy's food, workplace, and water safety sector, which includes around 3.4 million businesses generating more than €12 billion (about $13 billion) in revenue. Yet digitisation stands at just 3%—a massive opportunity. In just three years, Biorsaf has over 10,000 active users. Its clients range from small businesses to major restaurant groups such as Gruppo Cigierre and Compagnia Generale Ristorazione S.p.A. (which controls the Old Wild West, America Graffiti, Pizzikotto, Wiener Haus, Shi's, and Smashie brands), spanning HORECA through to large-scale retail, with operators including Conad. The funding round was led by P101 SGR, with participation from existing investors Maia Ventures and Farming Future – the National Technology Transfer Hub for AgrifoodTech, and Toscana Next. Farming Future supported Biorsaf's first funding round in November 2024. This move signals a bigger trend: AI is coming to food safety, and it's about time.
