Biorsaf raises €5.2M and acquires Cooki to create Italy's first AI-powered food RegTech platform, automating compliance from farm to fork.

Italy's food safety tech scene just got a whole lot more interesting. Biorsaf, a company based in Tuscany that's been quietly digitizing food safety and quality processes, has raised €5.2 million (about $5.6 million) and acquired Cooki, a Bologna-based platform that manages food information digitally. This move creates Italy's first one-stop shop for compliance and data management across the entire food value chain. ### What This Means for Food Businesses Imagine being able to handle everything from HACCP to quality control, traceability to nutritional values, and even cost analysis and labelling—all in one place. That's exactly what Biorsaf is now offering. The acquisition of Cooki rounds out their platform, making it a comprehensive solution for food companies of all sizes. ### The Funding Round The €5.2 million round was led by P101 SGR, with existing investors Maia Ventures, Farming Future (the National Technology Transfer Hub for AgrifoodTech), and Toscana Next also participating. Farming Future had previously backed Biorsaf's first round in November 2024, showing continued confidence in the company's vision. Marco Papalini, CEO of Biorsaf, didn't hold back his enthusiasm: "This new funding round and the acquisition of Cooki accelerate Biorsaf's growth. In just three years, we have built Italy's reference platform for automating food compliance, and we are ready for the next development stage." He added, "Bringing Cooki into the fold rounds out our offering and marks the first step in consolidating a market that is still highly fragmented. Our goal is to scale rapidly, both organically and through market consolidation and technological innovation, putting artificial intelligence to work for the efficiency of business in the food sector." ### Biorsaf's Journey So Far Founded in 2021 in Castell'Azzara (Grosseto), Biorsaf developed BS-Safe, a platform that digitizes food safety, workplace safety, and water quality management. The platform automates control processes, improves traceability, and centralizes data and regulatory compliance. It claims to eliminate paper entirely and automate manual checks, saving an estimated 30 minutes per user per day. In 2025 alone, it cut operating costs by €30 million (about $32.5 million) across active users, while improving efficiency, sustainability, and safety. The system serves everyone in the control chain, from company managers to specialist consultants. For consultants, Biorsaf built the first professional AI agent dedicated to digital food safety management, automating monitoring, compliance, and document management. ### Cooki's Role Founded by Giuseppe Grammatico in 2017, Cooki operates in over 450 Italian cities, with more than 1,000 users and a database of over 35,000 coded products. It automates traceability, labelling, food costing, stock management, and allergen risk management. Together, Biorsaf and Cooki now offer the only Italian solution that automates every major process across the food supply chain. ### The Road Ahead According to Biorsaf, this round and acquisition kick off a three-year plan. Revenues are expected to grow exponentially year on year, and the company plans to expand from 40 to 120 employees within the next 18 months. The core of the plan is developing a one-of-a-kind AI platform to transform quality, safety, and operations management. Biorsaf is targeting Italy's food, workplace, and water safety sector, which includes around 3.4 million businesses generating over €12 billion (about $13 billion) in revenue. Yet digitization stands at just 3%, presenting a massive opportunity. In just three years, Biorsaf has gained over 10,000 active users. Its clients range from small businesses to major restaurant groups like Gruppo Cigierre and Compagnia Generale Ristorazione S.p.A. (which controls brands like Old Wild West, America Graffiti, Pizzikotto, Wiener Haus, Shi's, and Smashie), spanning HORECA to large-scale retail, including operators like Conad. With this strategic move, Biorsaf is positioning itself as a leader in the food RegTech space, ready to capitalize on the huge potential that lies in digitizing food safety and compliance.
