Biorsaf raises €5.2M and acquires Cooki to create Italy's first all-in-one food compliance platform, automating safety, traceability, and labeling for 3.4M businesses.

The Tuscany-based company just raised €5.2 million (about $5.6 million) and acquired Cooki, a Bologna-based platform for digital food information management. Together, they're creating Italy's first all-in-one solution for food compliance—from HACCP to labeling and everything in between.
### The Deal That Changes Everything
The funding round was led by P101 SGR, with existing investors Maia Ventures, Farming Future, and Toscana Next joining in. Farming Future had previously backed Biorsaf's first round in November 2024. This fresh capital will fuel Biorsaf's expansion and the integration of Cooki, setting the stage for a three-year growth plan.

Our goal is to scale rapidly, both organically and through market consolidation and technological innovation, putting artificial intelligence to work for the efficiency of business in the food sector."
### What Biorsaf Brings to the Table
Founded in 2021 in Castell'Azzara, Biorsaf developed BS-Safe, a platform that digitizes food safety, workplace safety, and water quality management. It automates control processes, improves traceability, and centralizes data and regulatory compliance. The platform claims to eliminate paper entirely and automate manual checks, saving an estimated 30 minutes of work per user per day and cutting operating costs by €30 million (about $32.5 million) across active users in 2025.
Biorsaf serves everyone in the control chain—from company managers to specialist consultants. For the latter, it built the first professional AI agent dedicated to digital food safety management, automating monitoring, compliance, and document management.
### Cooki: The Missing Piece
Founded by Giuseppe Grammatico in 2017, Cooki operates in over 450 Italian cities, with more than 1,000 users and a database of over 35,000 coded products. It automates traceability, labeling, food costing, stock management, and allergen risk management. This acquisition enables Biorsaf to offer the only Italian solution that automates every major process across the food supply chain.
### The Road Ahead
With this round and acquisition, Biorsaf kicks off a three-year plan to grow revenues exponentially and expand from 40 to 120 employees within 18 months. The core of the plan? Developing a one-of-a-kind AI platform to transform quality, safety, and operations management.
Biorsaf is targeting Italy's food, workplace, and water safety sector—a market of around 3.4 million businesses generating over €12 billion (about $13 billion) in revenue. Yet digitization stands at just 3%. That's a massive opportunity.
In just three years, Biorsaf has gained over 10,000 active users. Its clients range from small businesses to major restaurant groups like Gruppo Cigierre and Compagnia Generale Ristorazione S.p.A. (which controls brands like Old Wild West, America Graffiti, Pizzikotto, Wiener Haus, Shi's, and Smashie), spanning HORECA to large-scale retail, including operators like Conad.
