The Wageningen-based FoodTech startup has raised โ‚ฌ1 million (about $1.1 million) to scale its cocoa upcycling technology for industrial production. The round includes ROM InWest, existing shareholder Brightlands Venture Partners (BVP), and a private investor. And that's just the opening act. The company is already closing an additional โ‚ฌ3 million (roughly $3.3 million) round, with commitments from both existing and new backers. ### From Coffee to Cocoa: A Proven Playbook Greencovery isn't a newcomer. Founded in 2018, the company has spent years refining its separation technology across coffee, oil press cakes, and nuts. But cocoa is where things get serious. Now it's scaling operations alongside a strategic partner to hit a 1,000-ton capacity. Zaandam, a city in North Holland, has been a European food processing hub for four centuries and remains central to the global cocoa trade. Greencovery is adding a circular twist to that heritage โ€” refining side streams locally instead of exporting them for low-value uses or disposal. "Upcycling side streams into functional ingredients instead of incinerating or downcycling them directly supports a circular food system," says Bas Kalshoven, Investment Manager at ROM InWest. "Deploying this technology with an industrial partner in North Holland is a prime example of regional collaboration." ### What the Money Actually Does The fresh capital will expand production of three functional ingredients derived from cocoa side streams: - Cocoa fibre - Cocoa extract - Cocoa soluble fibre These products give food manufacturers a reliable alternative amid global cocoa price swings. They also help brands meet demand for clean labels, natural flavours, and lower sugar content. Back in 2022, Greencovery secured โ‚ฌ500k (about $550k) to develop its separation-purification tech. This new injection is the first step in a much bigger expansion. The additional โ‚ฌ3 million round will fund full-scale commercial manufacturing and supply ingredients at volume. ### Why This Matters Beyond the Numbers Cocoa prices have been notoriously volatile.
